Maria's Blini

Mix with a beater until smooth: 2 cups milk, 1 1/2 - 2 cups flour. The mixture should be the consistency of thick cream. Lightly beat together:

  • 4 large eggs (enough to equal one cup)
  • 1 teaspoon salt
  • combine milk and egg mixtures, mix.
Pour just enough vegetable oil into skillet to cover bottom. Heat to moderately high. Pour in a small amount of batter, tilt skillet until batter covers entire bottom surface with a very thin layer. Cook until it lifts easily from the pan -- about 2 minutes -- then turn and cook other side. Stack blini on a plate while cooking the remainder.
Makes about 12 blini. Now: spread your blini with sour cream and jam, or fold them into quarters and spread with butter, or roll them around any filling that strikes your fancy -- and enjoy!
